Three days covers the essentials, five days lets you breathe, and a week opens up the islands and day trips. Distances and traffic mean two or three anchor activities a day is a realistic ceiling.
Three days
Day one for the old city monuments. Day two for a Bosphorus cruise plus Galata and Karaköy on foot. Day three for the Asian side and the bazaars.
Five days
Add Balat and the Golden Horn, a hamam afternoon, and a slow breakfast in Bebek with a walk up to Rumeli Hisarı. You will still be discovering neighbourhoods on the last morning.
A week or more
A week comfortably fits the Princes' Islands, a Bursa day trip, and a two-night side trip to Cappadocia if you fly rather than drive.
